The car list of Need for Speed III: Hot Pursuit includes a selection of American, Australian, and European supercars. Almost every car in the game has a showcase option which allows players to view real-life information, pictures, and a 360 degree interior view of the real-life vehicle although downloadable cars do not include showcases. It is also possible to perform fine-tuning and compare cars via in-game performance regardless of class.

The player can use the horn to activate siren and can sound audible loud speaker speech. Two of the police cars that replace the Ferraris are not available in Hot Pursuit mode. Each track setting has its own unique police cars.

  • Chevrolet Caprice Classic (for Hometown, Country Woods, Rocky Ridge and Lost Canyon tracks in the PSX version only)

In addition to standard police vehicles, a handful of Chevrolet Corvette C5 police cars are also included in each track, more equipped to engage in high-speed pursuits and capable of outperforming normal police vehicles. In the PSX version, if Expert difficulty is selected, Lamborghini Diablo SV pursuit vehicles replace the Chevrolet Corvette C5s.
