Citizens can have one of several professions. These are basically the jobs they are assigned to. Many professions work several buildings and are grouped as one title, such as a "Farmer" can farm at a Nursery or at a Field.
All Professions may have a period when their job has no work, at this point they will act like a Laborer.
An overview of your village's professional distribution can be viewed by clicking the Statics(I) icon, in the top left corner of the menu and viewing the first tab of Town. From here you can easily add workers to different Professions but lack the ability to contract directly which building they will work at. You can also cycle through each working by clicking on the little circle dot.
