Puppeteering concept
When in the Animus, you control your avatar through the system's hardware. Different controls correspond to parts of your avatar's body (and Desmond's in real life), for the purpose of making control more intuitive.
You are naturally in low profile, where most actions don't alert guards and you won't draw undue attention. When in high profile, you can perform more athletic and aggressive actions, although it is also easier to alert the guards.
