Completing levels in Resident Evil 5's story or Mercenaries modes rewards you with Exchange Points, which can then be used to buy Bonus Features. These features are available for purchase when you meet certain in-game requirements, such as completing a number of levels or finding enough BSAA Emblems.

Infinite Ammo

You can unlock infinite ammo for all the weapons in Resident Evil 5. Most of them require you to fully upgrade the weapon in question and then purchase the infinite ammo from the Bonus Features section, but some have additional requirements.
