There are many songs that you can play on the ocarina. Some of these are needed for the game, but it is possible to play other songs as well.
Playing Songs
To play ocarina songs, select the C button it is equipped to. Then, use

to play notes. Holding 
makes the note sharp, and holding 
makes the note flat. 
gradually raises the note to its next higher note, and 
dips it to the next lower one.

Epona's Song
Use in Hyrule Field to call Epona to your side or by a cow to get free milk.

Use anywhere to talk to Saria or Navi.
Sun's Song
Use outside to change between day and night. This song also freezes ReDeads.
Song of Time
Use to get into Temple of Time or manipulate a blue block in some areas.
Song of Storms
Use to make it temporarily rain.
Minuet of Forest
Use to warp to Forest Temple.
Bolero of Fire
Use to warp to Fire Temple.
Serenade of Water
Use to warp to Water Temple.
Requiem of Spirit
Use to warp to Spirit Temple.
Nocturne of Shadow
Use to warp to Shadow Temple.

Use to warp to Temple of Time.
