Entering the cantina in the southwest of the Upper City isn't strictly necessary, although if you do so then you can be invited to a party, allowing you to get the Sith uniform needed to get past the guard to the Lower City elevator in Upper City North. Once the search for Bastila is complete you can find Canderous here or in Javyar's cantina in the Lower City to see about escaping Taris, and here is more convenient at that point.
You can buy a Pazaak Deck in the east room to play this card game, wagering credits, and speak to the duel organizer in the south room to enter the duel ring, earning credits and experience, where becoming Taris Dueling Champion also gives you a chance to collect Upper City Cantina (moving closer to the dark side of the Force). However, in both cases it's better to wait until you've explored more of Taris while completing the search for Bastila, getting more cards, items and experience levels.

The lobby for the duel ring, containing the duel organizer, is to the south. Arena monitors line its east wall, and two duel spectators stand in the northeast corner. As you enter, a scene plays as you watch a duel between Gerlon Two-Fingers and Deadeye Duncan:
After completing the search for Bastila, you'll find Canderous Ordo in the central hub of the cantina, to the left of the western exit to the Pazaak room. You need to speak to him before escaping Taris will be possible.
